1. Peel and cut the onions into fine slices. Cook in a pan with its lid over low heat with olive oil, sardines oil, the spices and 15 cl of water fo 25 minutes.

2. Preheat the oven at  210°C (th. 7). When the onions have turned to confit, add the nuoc-mâm and then cook until the liquid has evaporated. Spread the dough on a tart pan.

3. After the preparation has cooled, spread it on the dough. Place the sardines and olives on top. Cut the tomatoes into fine slices and interlace them with the sardines. Bake for 20 minutes. Serve hot with a side salad
