Onion and bacon madeleines
We suggest you a sweet and sour recipe: madeleines with onions and bacon. Enjoy it as appetizer or starter.
1. Melt the butter in a small saucepan and let it cool.
2. Break the eggs into a bowl and beat them in an omelet. Pour the flour, baking powder and melted butter little by little, stirring well. Cover the bowl with cling film and refrigerate for 30 minutes.
3. Preheat the oven to th. 8/9 - 250°C. Cut 8 bacon slices into small pieces. Peel and slice the onions.
4. Fry the onions in olive oil until they become translucent. Sprinkle with sugar and let caramelize slightly for a few minutes. Sprinkle with thyme and mix. Let cool completely.
5. Add to the mixture bacon and onions, season lightly. Divide the batter into madeleine molds. Bake for 4 minutes. Then lower the oven temperature to th. 7-210°C and cook for 6 minutes.
6. Serve the madeleines warm on fried bacon slices.
