Caramel shortbread cookies

Here is a recipe to make delicious caramel shortbread cookies. A real treat.

  Ingredients

1. Combine the flour and butter with your fingertips. Add the sugar and egg yolks, mix gently.

2. Shape the dough into a ball, and add a little milk. Refrigerate for about 15 minutes. Roll out the dough of about 3 cm thick on a parchment paper.

3. Using a cookie cutter, cut two pieces of the same size. With a smaller cookie cutter make a cut in the middle of one out of two to pipe the caramel in.

4. Bake for 12 to 15 minutes at 180°C.

5. Make a dry caramel with sugar. Boil the cream and add into the caramel when it reaches a light brown colour, then mix well.

6. Put back on low heat and leave to thicken. Cool slightly and stir in the cold salted butter. When the cookies have cooled, place a small heap of caramel on the base and cover with the second cookie with the cut.
