1. Preheat the oven at 200°C (th. 6/7). Place the chicken in a oven tray. Use the handle of a spoon to gently lift the skin to create pockets.

2. Mix the butter with the sage, salt, pepper and lemon zest. Push the butter into the skin pockets and rub it with your fingers to spread it over the chicken.

3. Season then bake the chicken for 20 minutes per 500g. Let it rest for 10 minutes before serving.
