Prawn scampi salad with fruits
This is a great recipe to prepare a refreshing prawn and scampi salad with fruits. You will love it!
1. Bring a large amount of water to boil with the broth. Dip the prawns for 5 minutes and remove with a slotted spoon. Then cook the scampi for 3 to 5 minutes according to the size. Drain, shell and cut them in half.
2. Peel the grapefruits and segment using the blade of a knife. Then dice. Peel the mango and cut the flesh into small cubes. Wash the cucumber, cut in half and remove the seeds with a teaspoon. Cut the flesh into cubes.
3. Mix all ingredients in a salad bowl, except the prawns, and divide the salad in bowls.
4. Prepare a vinaigrette with the sunflower oil and balsamic vinegar, salt, pepper and Cayenne pepper. Sprinkle the salad with it, place 2 prawns in each bowl and garnish with mint leaves.
Our cooking tip: For the scampi, make them more brown in the oven, cut in half and coat with a little butter, chopped parsley and a little garlic. Another variant for a sweet and sour taste is to shell and fry them with fresh lychees, and then present on skewers.
