Scampi with cream and smoked salmon
Popular for their thin and delicate flesh, scampi can be cooked in many ways. Here is a recipe with cream and smoked salmon.
1. Peel the scampi leaving the tail shell. Wash, dry and thin out the curly parsley.
2. Heat oil in a large skillet. Add the scampi and stir-fry over high heat for 2 minutes. Remove from pan, set them aside on a plate.
3. Pour the cream into the skillet. Heat gently scraping the bottom of the pan with a wooden spatula. Add the tomato paste and cayenne pepper. Season with salt. Combine well. When it starts simmering, add the scampi.
4. Continue to cook for another 2 minutes, stirring to coat scampi with sauce. Arrange them with the sauce in the plates, add a slice of smoked salmon and garnish with curly parsley. Serve immediately with basmati rice.
