Farfalle salad with shrimps
This farfalle salad with shrimps is ideal for a light and affordable lunch.
1. Bring a large pot of salted water to a boil. Immerse the pasta and cook as indicated on the package for al dente. Drain and refresh under cold water. Set aside in a colander.
2. Wash the radishes and cut into slices. Wash the cherry tomatoes and cut in half. Wash, drain and dry the arugula. Squeeze half a lemon.
3. Mix the two oils and lemon juice. Salt and pepper. In a bowl, put the pasta, cherry tomatoes, radish slices, arugula and shrimp. Drizzle with the sauce and toss gently. Serve immediately.
Cooking tip : you can also add avocado and citrus. And for extra flavours, add some juicy grapefruit segments, its just great! One last tip, sprinkle with some fresh blanched crushed almond, it will be magical!
