Basmati rice salad with goji berries, feta and figs

Here’s a quick recipe to prepare a basmati rice salad with goji berries, fresh figs and feta.

1. Bring a pan of salted water to a boil. Pour the basmati rice gradually and cook it as the time indicated on the package. Drain and refresh under cold water. Pour into a bowl. Sprinkle rice vinegar and toss. Set aside.

2. Wash and drain the baby spinach leaves. Drain and cut the feta into small cubes. Rinse and dry the figs in paper towels. Cut into quarters.

3. Divide the rice, baby spinach, feta cheese, figs and goji berries on the plates. Drizzle canola oil, salt and pepper. Serve immediately.
