Cucumber and feta tartare
Prepare this refreshing starter that will delight the taste buds of your guests, a cucumber tartare with feta.
1. Blanch the tomatoes for 30 seconds and rinse under cold water. Peel and remove the seeds of the tomatoes and the cucumbers. Cut the tomatoes and cucumber into small cubes. Place in two separate sieves and sprinkle with salt. Leave for 1 hour. Cut the feta into cubes.
2. After 1 hour, place the vegetables in a salad bowl with the feta and the pine nuts. Mix and refrigerate.
3. Wash, dry and loosen the basil. Press the juice of 1/2 a lemon. In a bowl, prepare the vinaigrette with olive oil and lemon juice. Add pepper.
4. Divide the tartare onto aperitif spoons. Sprinkle with lemon sauce. Top with basil. Serve chilled.
