Poached pears with chocolate and vanilla

Nothing like the poached pears with chocolate and vanilla to end a meal in finesse. Enjoy!

1. Pour the sugar in a pan. Add 40 cl of water and a vanilla bean split lengthwise. Bring to a boil and leave to boil for 5 minutes.

2. Peel the pears and place in a pot that can hold them upright. Sprinkle with syrup and cook gently for 20 minutes. Coat the pears with syrup often.

3. During this time, chop the almonds finely. Melt the chocolate in a pan with 1 tablespoon of water. Remove from heat and add the chopped almonds. Mix well, set aside.

4. Remove the pears and leave to cool. Cut them into three pieces horizontally. Place the base of the pear onto 4 plates. Cover with a thick layer of chocolate and almonds. Place a slice of pear on top and continue until you get a whole pear again.

5. Decorate with creme anglaise and sprinkle with icing sugar.
