Chicken and pumpkin parmentier

Here is a recipe to prepare a chicken parmentier with pumpkin. You will love it.

1. Chop the bacon into sticks.

2. In a pan, heat the milk. Add the smoked bacon and leave to infuse for 30 minutes off the heat. Filter.

3. Peel and wash the onion.

4. Peel the pumpkin, cut into pieces and place in the filtered milk. Add the onion and cook until it is tender. Blend into a puree, add butter and season.

5. Steam the chicken with a thyme sprig for 10 minutes. Chop the chicken.

6. In 4 verrines, place a bed of pumpkin puree and a piece of chicken. Enjoy.
