Endive soup with sausage

Here is a recipe to prepare a soup with endives and sausage. An original way to start your meal.

  Ingredients

1. Mix the powdered sugar in 20 cl warm water.

2. Remove the damaged endive leaves. Wash the endive and dry, then chop finely. Peel and chop the shallots. Melt the butter in a pot. Fry the shallots then incorporate the endives and the sugar/water. Cover and cook over low heat for 10 minutes.

3. Pour the stock into the pot. Salt lightly and add pepper. Cook for 10 more minutes. Cut the sausages into slices.

4. Set some chopped endives aside.

5. Blend the soup finely. Pour back into the pot. Add the sausages. Heat for 5 minutes over very low heat. Wash and dry the basil or the parsley. Loosen and chop it.

6.. Divide the soup into 6 bowls. Add the remaining endives. Sprinkle the basil. Serve hot with creme fraiche and small croutons.
