Rice salad with sausages

Who says a salad can’t have carbs? Try this rice salad with sausages for a filling entree.

1. Cook the rice according to the directions on the pack. Drain and place in a bowl to cool. At the same time, cook the eggs in boiling water for 10 minutes.

2. Bring salted water to a boil in a pot and immerse the sausages after pricking them. Cook for 5 minutes, drain and cut into slices.

3. Wash and dry the bell pepper, remove the seeds and the white parts. Dice the bell pepper. Cut the sun-dried tomatoes into strips. Peel the hard boiled eggs and cut them into quarters. Wash, dry and chop the chives.

4. Whisk the oil and vinegar, season with salt and pepper. Pour the dressing on the the rice and mix. Add all the other ingredients and add the black olives.

5. Divid the rice salad into 4 plates. Sprinkle some freshly ground pepper. Serve immediately.
