1. Clean the mussels and the shells in a large bowl of water. Place in a pot with the peeled and chopped shallots, parsley, thyme and white wine, and cover. Cook for some minutes over high heat and stir until the shells open. Leave to rest for 2 minutes with the lid on. Remove them with a slotted spoon. Remove the flesh from the shells and set the shells aside for decoration.

2. Immerse the squid for 1 minute in the pot in boiling salted water and drain.

3. Wash the salad and dry. Rinse the tomatoes and cut into fine quarters.

4. Filter the brine from the shells and pour in a bowl. Add mustard, balsamic vinegar, grapefruit juice and olive oil. Add pepper and adjust seasoning if necessary.

5. Mix the salad, tomatoes, shells, squid and chervil in the bowl. Serve the salad.
