Greek mussels
Looking for a quick and easy recipe? Whip out this Greek mussels dish at your next party.
1. Clean the mussels thoroughly. Peel and chop the onions. Wash and cut the tomatoes into slices. Wash and dry the parsley. Squeeze the lemons.
2. Heat the oil in a pot and fry the onions and the tomatoes without browning them. Add the mussels and pour in the white wine. Salt lightly and add pepper. Cover the pot and cook over high heat. Shake the pot from time to time: the cooking is done when all the mussels have opened.
3. Shell the mussels. Filter the cooking juices, pour back in the pot with the mussels, tomatoes and leave to simmer.
4. Divide the mussels into 4 glasses and sprinkle the cooking juices. Decorate with a sprig of parsley. Serve.
