History

The Corinthians used to mix figs and grapes and sell them to the Venetians. As figs are less expensive and heavier than grapes they were able to sell more.

In the kitchen

Fig is perfect to make jam or when preparing a tart. Combine figs with almonds or honey is always a hit. It can also be cooked for crumble and tajines. Poached in red wine with cinnamon, honey or vanilla, is also a treat. On the savoury side, it will accommodate delicately duck, chicken and, of course, foie gras. Dried, it will enhance the goat cheese.

How to choose figs?

It must be neither too firm nor too soft because it is fragile. If a small white pearl drops to the base of the fruit, it is a sign of freshness. You can store for two to three days in the fridge.
