Follow the recipe for a perfect shortbread pastry dough filled with fig jam and fresh figs.

1. Prepare the shortbread pastry dough. Whisk the egg yolks with the sugar. Pour the flour and stir in the butter in pieces. Using your hands, knead until smooth texture..

2. Preheat the oven to th. 7-210°C. Roll out the dough very thinly and transfer in a buttered tart pan. Trim the excess dough using a pastry cutter.

3. Spread with fig jam the bottom of the tart shell and arrange with fresh figs. Make a lattice on top of the tart.

4. Bake for 30 minutes. Let cool before serving.
