Udon noodles with vegetable and shrimp tempura

Udon noodles are essential in Japanese cuisine. Add some vegetables and shrimps and you will end with a delicious dish. Follow the recipe.

1. Bring to a boil 1,5 l of water. Add dashi, stir and simmer for 10 minutes. Pour soy sauce, mirin sauce over low heat while preparing tempuras.

2. Peel shrimp keeping the tail. Pat dry. Break off the ends of asparagus and wash under running water. Wash mushrooms and cut into strips.

3. Cook noddles as indicated. Place under cold water and set aside.

4. For the tempura batter, whisk in a bowl 20 cl cold water with the whole egg. Combine flour, little by little.

5. Heat the frying-oil. Dip, one by one, vegetables and shrimps in the tempura batter and deep-fry them in small batches. When golden, remove and drain on paper towel.

6. Arrange noodles in bowls, pour the hot broth and serve with tempuras.
