Tagliatelle and arugula salad

For a great and healthy starter, this is a recipe with tagliatelle and arugula.

1. Pour 2 tablespoons of oil in a large bowl, add the lemon juice, salt and pepper. Combine well.

2. Cook pasta tagliatelle in a large pot of boiling salted water for the time indicated on the package. Drain and pour into a bowl. Add 2 tablespoons of pasta cooking water and stir, then cover and let cool to room temperature, stirring occasionally.

3.  Just before serving, wash and pat dry arugula. Pour 1 tablespoon of oil over the pasta, mix again and add arugula, sprinkle with parmesan cheese and serve immediately.
