Stir-fried asparagus with fava beans

For a light entree, try this stir-fried asparagus with fava beans dish.

1. Break off the ends of the asparagus if needed. Rinse under running water and cut into sections.

2. Bring a large pot of salt water to a boil, immerse the asparagus and cook for 12 minutes until they are tender. During this time, unstring the fava beans and blanch them for 1 minute in a small pot of boiling water then toss in a bowl of cold water. Press them between your thumb and index finger to remove the skin. Set aside. Remove the asparagus from the pot and set on a clean towel.

3. Peel, clean and chop the cloves of garlic.

4. Heat the oil in a pan with soy sauce, cook the asparagus and beans for 5 minutes on strong heat. Salt and pepper to taste. Add the garlic then cook for 2 minutes and stir gently.

5. Divide the vegetables onto 6 plates and serve.
