Savoury chicken and coriander cake
Here is an excellent recipe to prepare a chicken and coriander cake.
1. Preheat oven to 180°C.
2. Trim a little the minced chicken to avoid having too large pieces and chop the coriander. If the butter is not soft enough then place it a few seconds in the microwave, and mash with a fork until a soft butter. Add flour, baking powder and combine well.
3. Add the curry, cumin, eggs and milk, mix well until a smooth mixture.
4. Add the chicken and chopped coriander and season with salt and pepper.
5. Pour the mixture into a loaf pan and bake for about 40 minutes for a large savoury cake and about 30 minutes for individual ones.
Our cooking tip: For a clean cut, slice the savoury cake when it is cold, and reheat after.
