Quinoa salad with cucumber and mint
You want to prepare a healthy dish, but easy to prepare? Try our quinoa salad cucumber and mint recipe.
1. Rinse quinoa under cold water. Bring to a boil a pot of salted water and cook the quinoa for 15 minutes. Drain, refresh under cold water and let drain and cool completely in a colander.
2. Partially remove the cucumber peel in lengthwise strips, cut it in half, remove the seeds and cut it into small cubes. Wash, dry, and finely chop mint. Squeeze the lemon juice.
3. Put all the ingredients in a bowl. Sprinkle with lemon juice and olive oil, salt, pepper and mix gently. Cool and refrigerate until ready to serve.
Our tip: refrigerate the salad for at least 30 minutes, so quinoa absorbs all the flavors of other ingredients.
