Pizza omelet with tomatoes

Follow an original recipe with eggs and tomatoes, pizza-style. Easy and quick to make.

1. Break the eggs in a bowl, add salt and pepper and reme fraiche. Whisk lightly with a fork. Melt the butter in a large nonstick pan. Pour the eggs in and cook over high heat until it sets. Then when the corners start to take, lower the heat and cook for 5 minutes.

2. Turn on the oven.

3. Transfer the omelet in a baking sheet or in a large pizza mould. Add the tomato sauce on top and the chopped mozzarella. Sprinkle with oregano and drizzle olive oil. Add the sliced tomatoes. Leave for 2 minutes on the grill.

4. Remove from the oven, sprinkle some arugula and chopped parmesan. Serve.
