Leek and roquefort mini quiches

Here is a recipe to make leek and roquefort mini quiches. You can serve these delights for starter.

  Ingredients

1. Split the leeks lengthwise, wash thoroughly and cut into sections

2. Melt the butter in a pan, add the leeks and cook over low heat for 15 minutes without coloring. Salt and pepper.

3. Preheat the oven to 210°C (th. 7).

4. Roll out the 2 dough on the work surface and cut them to the size of the tartlet molds. Transfer the dough into the molds, prick with a fork and line  with parchment paper.

5.  Divide the leeks in the bottom of the tartlet shells. Whip the cream with the eggs. Salt and pepper. Pour in the mixture over the vegetables.

6. Cut the roquefort into small cubes and sprinkle on the tartlets. Bake for 23-25 minutes. Serve hot or cold.

Our cooking tip: For a fulfilling meal, serve a quiche with a green salad and some cherry tomatoes.
