Endive and apple tarte tatin

1. Rinse and dry the endives, remove the core and cut into quarters lengthwise. Heat 30 g butter in a pan, then add the endives and let brown for a few minutes over a high heat. Add half of the lemon juice, 1 teaspoon of sugar, salt, pepper and nutmeg. Cover and cook for 15 to 20 minutes on low heat.
2. Meanwhile, peel the apples and cut into eight wedges. Pour the other half of lemon juice. Heat the remaining butter in a pan, add the apples and 1 teaspoon of sugar. Sauté for 15 minutes on low heat. Preheat the oven to 200°C (th. 7).
3. Divide the endives and apples at the bottom of 4 tart pans.
4. Roll out dough and cut 4 discs with a diameter slightly larger than the molds. Pour the filling, then place the dough on top with the edges inside of the molds. Bake for about 20 minutes, until the dough is golden brown. Unmold and serve with some chopped hazelnuts.
