Here is a recipe for eggplant gruyere balls that will be a hit. Delicious!

  Ingredients

1. Wash the eggplant and slice.

2.  Wash the parsley, and mince. Finely chop the garlic.

3. Blanch the eggplants for 15 minutes in boiling salted water. Drain and blend into a puree. Stir in garlic and parsley.

4. Add the grated cheese, beaten egg, salt, pepper, cumin and breadcrumbs. Mix well.

5. Shape into balls. Roll in the flour and fry in hot sunflower oil. Serve with a fresh salad.
