Cauliflower couscous

Here is a very original alternative and equally tasty couscous traditionally served during weddings in Morocco.

  Ingredients

1. Soak the raisins in a bowl of warm water. Chop the dill. Peel and slice the onions. Chop the mint and parsley.

2. Separate the cauliflower florets, wash and pat dry. Grate and set aside.

3.  In a bowl, place the egg yolk, mustard, salt, pepper and cumin. Gradually pour the oil, whisking. When the sauce has the consistency of a mayonnaise, add the cottage cheese and half the herbs and mix.

4. In a bowl, combine the cauliflower, pine nuts, raisins, onions, the remaining herbs and the mayonnaise.

5. Serve on a plate with the remaining mayonnaise on the side.
