Pearl sugar brioche

To all sweet-tooth: here is the recipe to make pearl sugar brioches. These little treats are delicious.

1. Warm up the milk. Combine the flour, sugar and salt. Make a hole and add yeast (it must not be in contact with the salt because it would neutralize the rise of the dough).

2. Pour the warm milk slowly, eggs and soft butter. Knead with an electric mixer for 5 minutes and then another 5 minutes by hand on a floured surface. Cover and stand for 15 minutes

3. On a floured surface, place the dough and shape into balls. Place them in  mini brioche molds, cover and let stand for 1 hour and 15 minutes. The dough should double in volume.

4. Preheat the oven to 180°C Brush the brioches with a little bit of slightly sweetened milk. Sprinkle with pearl sugar or chocolate chips and bake. Remove from the oven, brush one more time with sweetened milk.
