Dulce de leche crêpes
For Candlemas, prepare delicious dulce de leche crêpes with our gourmet recipe.
1. Prepare the dulce de leche: pour the milk, sugar and vanilla pod split in half in a saucepan. Bring to a boil. Reduce the heat when it start simmering and cook for 2 hours over low heat, stirring every 10 minutes: when the preparation takes a nice caramel colour, remove the vanilla and stir. The dulce de leche is ready when it coats the back of the spoon. Pour into a jar. Let cool and refrigerate.
2. Prepare the crêpes: Pour the flour in a bowl. Make a well in the center and pour half of the milk. Stir with a spatula. Add the beaten eggs. Stir in oil, salt and sugar. Gradually pour the remaining milk. Let rest for 1 hour at room temperature.
3. Cook the crêpes in a buttered skillet. Spread dulce de leche and roll. Serve the remaining milk jam apart in a small pot.
