Ingredients
1. Peel the pears. Melt the butter in a large pan and cook the fruits, stirring constantly. Sprinkle with sugar and let caramelise over low heat.
2. When the pears have a beautiful amber color, pour the white wine, add the spices and cover. Cook for 20 minutes on low heat.
3. Place the pears in a bowl, pour the cooking juices and let cool completely.
4. Divide the pears and syrup into glasses, add 1 scoop of rum raisin ice cream and serve immediately with almond tuiles.
