1. Prepare the caramel. Pour the sugar in a saucepan with a little water and a few drops of lemon juice. Cook over high heat without stirring. When the caramel begins to colour, turn slightly the pan to even the cooking of the caramel. Remove from the heat as soon as it has the right colour. Divide the caramel into 6 ramekins.

2. Prepare the custard. Preheat the oven to th. 6-180°C. Beat the eggs, then add the two yolks and sugar. Beat until the mixture is foamy. Pour the hot milk (but not boiling) in slowly, while continuing to beat, until a smooth custard.

3. Divide the custard onto the caramel in the ramequins. Place in the oven for 30 minutes in a water bath. Let cool completely, then refrigerate.

4. Just before serving, dip the ramekins in hot water. Slide a knife blade inside to take off the custard, then unmold by quickly turning the ramekins upside down on the plates. Serve immediately.
