Coffee and chocolate macarons
You too, can make macarons easily with the aid of this recipe. Choose between chocolate ganache or coffee cream.
1. Prepare the ganache: break the chocolate in a bowl. Bring the liquid cream to a boil, pour the chocolate in and mix until it dissolves completely. Add the butter parcels and mix. Leave to cool and set aside in the fridge.
2. Prepare the coffee cream: cut the butter into parcels and wait until they are soft. Place the sugar in a pan. Add 5 cl of water. Bring to a boil. Cook until the syrup reaches 116°C. Whip the yolks into a mousse in a bowl and pour gradually the syrup. Continue to whisk until it completely cools. Incorporate the butter and the coffee. Place in the fridge.
3. Prepare the macarons: beat the egg whites into stiff peaks with 1 pinch of salt. Add the granulated sugar and vanilla sugar while whisking constantly. Sift the icing sugar and almond powder. Incorporate the mixture with the egg whites. Divide it into 2 parts. In one, incorporate the cocoa and in the other coffee extract. Preheat the oven at 150°C. (th.5)
4. With a piping bag, make circles with the batter on a tray line with parchment paper. Bake for 13 minutes. Remove from the oven and pour a little cold water between the tray and parchment paper and wait for 3 minutes before prying the biscuits off. Repeat with the remaining batter.
5. Assemble the macarons and pipe the ganache or coffee cream.
