Coconut panna cotta with berries

  Ingredients

1. Place the gelatine leaves in a bowl of cold water for about 10 minutes to soften.

2. Pour the coconut milk and cream in a saucepan. Add the vanilla pod in half and vanilla beans scraped with a knife. Add sugar, stir and bring to a boil.

3.  Remove from heat, cover and let infuse for a few minutes. Drain gelatin leaves and add to the saucepan, stirring to melt.

4. Divide the mixture into 4 glasses and allow to cool. Then place in the fridge for 4 hours. Before serving, pour the coulis over the panna cotta and decorate with fresh fruits.
