Almond milk and chocolate panna cotta
Give a twist to your traditional panna cotta with almond milk and chocolate. Refreshing and creamy.
1. Soften the gelatin leaves in a bowl of cold water. Split the vanilla pod in half lengthwise.
2. In a saucepan, pour the cream, almond milk, vanilla pod, sugar. Place over low heat and bring to a boil. Boil for 5 minutes. Take off the heat and remove the vanilla pod.
3. Drain the gelatin leaves and melt into the boiling cream, whisk vigorously. Divide the mixture into 6 glasses. Place in the fridge for at least 2 hours.
4. Just before serving, melt the dark chocolate in a saucepan with 2 tablespoons of water.
5. Heat a skillet and roast the almonds. Pour the melted chocolate on top of the panna cotta. Sprinkle with almonds. Serve immediately.
