Cantonese fried rice

If you're a beginner, try this easy Cantonese fried rice for a one dish meal.

1. Cook 200 g rice for 20 minutes in boiling salt water. Prepare 100 g of mushrooms or black shiitake mushrooms: cut off the stems and wash quickly. Chop the mushrooms. Fry them in 2 tablespoons of oil.

2. In a pot, cook 1 litre of mussels until they open. Shell them.

3. Poach 200 g of white fish in boiling water or stock of your choice. Peel 100 g cooked shrimp.

4. Beat 4 eggs, add salt and pepper,. Make a large and dry omelet in in a pan with 20 g butter. Cut into strips. Drain 250 g peas.

5. In a pot, place the rice, the mushrooms, shrimps, mussels, sliced fish  and peas. Reheat slowly until hot then decorate with the omelet strips.
