Ingredients
1. The day before, cut the chicken legs in two pieces and place them in a shallow dish. Peel and slice the onions. Wash, dry, thin out and chop coriander.
2. Brush a lime, zest and squeeze. Sprinkle the chicken with the lime juice and a drizzle of olive oil, sprinkle with onion and coriander. Salt and pepper. Sprinkle the 4 spice blend. Leave to marinate for 1 hour in the fridge.
3. Heat 3 tablespoons of oil in a large pot. Add the chicken with onions. Drizzle the marinade and stock. Turn down the heat to low, cover and cook for 45 minutes.
4. When cooking is finished, let cool in the pot and refrigerate until the day after.
