Minced meat with pumpkin and cranberries

Here is a meat recipe with pumpkin and cranberries. Original and quite easy to achieve.

  Ingredients

1. Preheat the oven to 200°C (th. 6/7). Peel 2 small onions 1 garlic clove and dice. Thin out 4 thyme sprigs.

2. Sauté 500 g of mixed minced meat with 2 tablespoons of olive oil until it is light brown. Add the onions, garlic and thyme and let cook for 2 minutes. Then stir 1 teaspoon of tomato puree and mix. Then pour 30 cl of water and bring to a boil.When it starts simmering, add 60 g of dried cranberries, 1 pinch of cinnamon, salt and pepper.

3. Cut 500 g of pumpkin in half, remove the seeds and grate the flesh. Fold in 2,5 tablespoons of melted butter and 30 g of cranberries. Salt and pepper.

4. Buttered 4 minipots (12 cm diameter). Fill them with the minced meat and cover with the grated pumpkin. Bake for 45 minutes.
