Here is a quick recipe to prepare a sandwich straight from Italy. Enjoy it for snack or brunch.

Ingredients
1. Wash and dry the arugula. Wash, dry and slice the tomatoes. Cut parmesan shavings with a peeler.
2. Cut the baguette into 4 equal portions and thencut in half lengthwise and toast.
3. Drizzle the bread with olive oil. Divide the tomato slices, salt and pepper and add coppa. Arrange arugula and parmesan shavings. Top with bread. Serve immediately.
