Guinea fowl with caramelized fruits
With our recipe, cook a guinea fowl with caramelized fruits. Fine dining lovers will enjoy, for sure!
1. Preheat the oven to 180°C (th. 6). In a bowl, combine 3 tablespoons of honey, 3 cinnamon sticks, 3 star anise, 1 piece of ginger, ½ teaspoon of nutmeg and 2 tablespoons of vegetable oil.
2. Put 1 guinea fowl in a baking dish. Sprinkle with the honey/spices mixture. Salt and pepper, then arrange 3 bay leaves around poultry.
3. Bake for 40 minutes, basting regularly with the sauce.
4. Peel 4 apples and 4 pears, cut them into quarters. Wash and detach the grapes. Add the fruits 20 minutes before the end of cooking of the guinea fowl with 10 dried apricots, 2 tablespoons of raisins, 2 tablespoons of chopped hazelnuts and 2 tablespoons of chopped walnuts.
Our cooking tip: For an even more tender meat, leave the poultry to rest in its juice for 10 minutes before serving.
