Glazed lamb shank with spices

For a hearty meal, we recommend this recipe to prepare a lacquered lamb shank with spices. It's a treat.

  Ingredients

1. Peel and chop 500 g red onions. Brown them in 1 tablespoon of oil, then blend with a little water to obtain a thick paste. Blend 1 tablespoon of grated ginger and 3 cloves of crushed garlic with a little water.

2. Place 60 g of clarified butter over high heat, add 1 teaspoon of cinnamon powder, the garlic and ginger paste, then brown them. Add the 4 lamb shanks and brown them on all side for about 4 minutes.

3. Add 1 dash of chilli powder, 1 tablespoon aniseed powder, then 200 g of crushed tomatoes. Add salt and pepper and leave to simmer over low heat for 10 minutes.

4. Incorporate the onion paste and leave to simmer for 1 hour. Add 1 bunch of fresh chopped cilantro and a pinch saffron threads 10 minutes before the end of the cooking.

5. Before serving, caramelise 4 tablespoons of brown sugar with the juice of 1 lemon. Pour this glaze on the lamb.
