General informations
Ingredients
1. Peel the potatoes and cut into cubes. Wash and dry in paper towels.
2. Melt the duck fat, let brown the potatoes for 5 minutes over high heat. Then reduce the heat, salt, pepper and cook for 30 minutes, stirring regularly.
3. Heat a skillet with no fat and pan-sear the slices of foie gras for 1 minute on each side.
4. Divide the sautéed potatoes in 6 plates and place the slices of foie gras on top. Salt and pepper. Serve immediately.
