1. Soak the ham in cold water for 2 hours. Rinse and drain.

2. Peel and slice an onion. Heat oil in a pot and brown the onion with the bay leaf and juniper berries. Remove from the pot with a slotted spoon, place in cheesecloth and tie.

3. Rinse with water the sauerkraut. Drain and squeeze thoroughly. Melt the duck fat in a large pot and fry for 1 minute the sauerkraut. Add the cheesecloth. Pour in the white wine. Peel the remaining onion and prick it with cloves. Add the ham, bacon, sausage and onion in the pan, salt and pepper. Cover and cook for 1 hour 30 minutes over low heat.

4. Peel and wash the potatoes, then cut in half. Add in the pot and cook for 30 minutes.

5. Arrange the sauerkraut in a dish with meat, sausage and potatoes. Serve immediately.
