Catalan meatballs
Have a hearty meal with these Catalan style meatballs in tomato sauce.
1. Soak the white beans overnight.
2. Place the mushrooms in a bowl and sprinkle with warm water. Sprinkle the dry bread with milk. Peel and chop the garlic. Wash, dry and chop the parsley. Peel and chop the onions.
3. By hand, mix the minced meats, strained milk soaked bread, eggs, parsley, salt and pepper in a bowl. Form balls of 5 cm in diameter with wet hands.
4. Pour 3 tablespoons of oil in a pot, fry the onions and add the meatballs and brown on all sides.
5. Pour the water in and cook for 20 minutes. Remove the meatballs and add the beans in. Cook for 30 minutes on low heat.
6. Then, add the peeled tomatoes, the drained mushrooms, the olives, the parsley, salt and pepper then cook until it reduces. Add the meatballs and then cook for 5 more minutes. Serve hot.
