Beef skewers with vegetables and Provencal tomatoes
Make this easy grilled beef skewers with a healthy amount of vegetables.
1. Prepare the Provencal tomatoes: wash and dry. Cut in two and place on a baking sheet covered with aluminium foil, flat side up. Peel and chop the garlic, finely. Wash, dry and mince the parsley. Mix the bread crumbs, garlic, parsley and olive oil. Add salt and pepper to taste. Spread the mixture on the tomatoes. Set aside.
2. Prepare the skewers: cut the beef into cubes. Wash, dry and cut the zucchinis into cubes. Wash, dry and cut the cherry tomatoes in half.
3. Place the beef, the cubes of zucchini and the tomatoes onto a dish. Season with salt and pepper and drizzle some olive oil on top. Sprinkle thyme. Leave to marinate for 10 minutes, then thread all the ingredients onto the skewers in alternating order.
4. Preheat the oven at 210°C (th.7). Bake the tomatoes for 10 minutes, then add the skewers to the baking sheet and then cook for 10 minutes, turning the skewers regularly. Serve right out of the oven.
Our cooking tip: Instead of cherry tomatoes, you can use bell peppers and/or eggplants.
