Beef carpaccio with tomme des Bauges

Depending on your tastes, you can replace Tomme Bauges with parmesan. Your carpaccio dish will be even tastier!

1. Make the marinade: squeeze the lemon and pour the juice in a bowl, add salt and pepper and make an emulsion with olive oil by whisking. Add the chopped chives.

2. Place the beef onto the plates and lightly brush with the marinade. Place in the fridge for 10 minutes.

3. Remove the crust of the tomme des Bauges and cut into strips.

4. Remove the plates from the fridge and place the chopped mushrooms and the cheese on top. Season to taste. Serve very cold.

Our cooking tip: You can replace the tomme des Bauges cheese with parmesan.
