Poached pears with beer and almonds

1. Pour the wheat beer with 20 cl of water in a saucepan. Add 250 g of sugar and lemon juice. Bring to a boil.

2. Peel the pears and cut in half. Remove core and seeds. Dip them in the syrup and cook for 15 minutes, until tender.

3. Heat the milk, cream, remaining sugar and vanilla pod split in half in a saucepan. Stir in the almond powder. Stir for 5 minutes. Remove from heat and let infuse for 30 minutes. Filter and pour back in the saucepan over low heat. Add the cornstarch and stir until thickened. Leave to cool.

4. Break the eggs, separating the whites from the yolks. Add the yolks to the cold cream, mixing well. Beat the 3 egg whites until stiff with 1 pinch of salt. Add them to the mixture. Refrigerate for 4 hours.

5. Drain the pears and arrange in 6 plates. Pour the cream and sprinkle with toasted almonds before serving.

Alcohol has to remain a pleasure, drink with moderation.
