1. Peel the apples, remove the core with the seeds and then cut into strips. Peel the pineapple and cut into small slices.

2. Prepare the tempura batter: whisk the whole eggs and 20 cl of ice water in a bowl. Stir in flour gradually while continuing to whisk.

3. Heat the frying oil. Dip the fruits in tempura batter and then immerse gently in hot frying oil for 20 seconds. Make small batches. Drain on paper towels. Sprinkle with sugar and serve immediately.
