Frozen lime soufflé
There are many soufflé recipe. We suggest to try this one with lime. You will love this fruity frozen dessert.
1. Grate the zest of 2 limes. Then squeeze the 3 limes. Break 4 eggs, separate whites from the yolks. Put 3 gelatin leaves to soak in a bowl of cold water.
2. Beat the egg yolks with 200 g of cottage cheese, lemon juice and 1 teaspoon of starch. Cook over low heat until boiling and then remove.
3. Drain the gelatin and add it to the mixture. Beat the egg whites with 1 pinch of salt. Slowly add 100 g of sugar. Stir into the cream.
4. Insert 4 parchment paper sheets in the individual soufflé molds, leaving more than 2 cm from the edge. Pour the preparation and place in the freezer for 4 hours. Remove the paper before serving and sprinkle with lemon zest.
