Parmesan soufflés with nutmeg

We recommend our parmesan soufflé recipe with nutmeg. They are delicious and easy to prepare.

  Ingredients

1. Buttered 6 ramekins with 20 g of butter. Refrigerate. Preheat the oven to 180°C (th. 6).

2. Break the eggs, separating the whites from the yolks.

3. Melt 40 g of butter in a saucepan. While whisking, add flour, and mix for 2 minutes. Pour the milk gradually, stirring constantly. Leave to cook for about 6 minutes, until thickened. Add salt, pepper and nutmeg. Stir in the grated parmesan and remove from heat. Let cool and add the egg yolks one at a time, stirring between each addition.

4. Beat the egg whites until stiff with a pinch of salt. Fold into the previous mixture. Don’t mix too much, so the texture remains airy and light.

5. Divide the mixture into the ramekins. Bake for 15 to 20 minutes. Serve immediately.
