Curried avocado and green apple tartare
The avocado is soft and tender while the green apple is crunchy and sour. The combination of the two gives an absolutely delicious tartare.
1. Peel and chop the shallots. Wash and dry the apples. Cut into quarters and remove the core and seeds. Peel and remove the pits from the avocados then cut into quarters. Cut all into small cubes and place in a bowl with the shallots.
2. Squeeze the limes. Sprinkle the mixture with the lime juice, peanut oil and a few drops of sesame oil and tabasco. Add salt, curry and toss. Place in the fridge.
3. After removing the stalk, scald the bell pepper for 1 minute. Drain and peel. Remove the seeds and mince the flesh.
4. Fill a ramekin with the avocado and apple salad. Remove it from the mould onto a plate. Repeat the same process for each plate. Decorate with the bell pepper strips. Serve immediately.
